Brix: Chocolate for Wine

Dr. Nick Proia, an Ohio pulmonologist, developed Brix when he realized that most chocolates were either too much like candy or were too bitter—both not ideal for pairing with wine. After a lot of trial and error, he crafted four blends (Milk, Smooth Dark, Medium Dark and Extra Dark), specifically to complement wine. Using single-origin Ghanaian chocolate, which is known for its unique red fruit tones, Brix has a pure flavor that enhances the nuances found in great wines without confusing the palate.
